Audrey Maretzki

Audrey Maretzki is an Emeritus Professor of Food Science and Nutrition at The Pennsylvania State University. From 1991-2005 she led development initiatives in Kenya and Namibia that included the formation of rural women's cooperatives to process and market culturally acceptable, nutritious, shelf-stable porridge mixes. These unique food mixes were formulated by women in each community from locally available commodities including maize, wimbi (finger millet), mahangu (pearl millet), dried beans, cowpeas, bananas, pumpkin, carrots, and pumpkin and amaranthus leaves. The products were designed to meet the needs of older infants and young children, pregnant and lactating women, the elderly and HIV+ individuals. Since 1995, Maretzki has co-directed the Interinstitutional Consortium for Indigenous Knowledge at Penn State.
